Dipped Gingersnaps in a Can :)



So since Shawn has been gone he's only made a few requests - one being dipped gingersnaps.  They've always been a family favorite and anyone I have ever made them for always asks for more.  So since the timing was right I decided to make them for valentine's day.  He will just have to celebrate a few days late because they went in the mail today!

Anyway, I wanted to share a few pictures of the process.  Enjoy!


Cream the sugar oil and eggs and add the molasses


Try not to have adorable distractions - they will slow you down!


In a separate bowl, add the dry ingredients


The dough will look and smell yummy but it takes a few batches to acquire a taste for it :)


Roll the dough into quarter size balls and roll into the sanding sugar


Place 2" apart on parchment paper


Watch the cookies and drool :)


Bake 8 minutes


Dip cookies halfway and let excess drip off


Put about 20 chips in a baggie and melt in the microwave. 
Clip a small piece off the corner and drizzle :)


 Now since I have a little one, the cans came in handy. 
I'm sure you could find many useful containers to use the same way.


Decorate and share :)


 I thought the black and white one was my favorite but the more I look at them the more I like the blue one :) Happy valentine's day Shawn - I love and miss you!

Our baby is ONE!

Well the day as come and gone.. Our baby Elijah turned one yesterday.  I am forever grateful to have been home from my deployment to spend the day with Elijah and only wish Shawn could've have physically been here too.  We ended up postponing Eli's party until later because of his impetigo, but we still decided to smash a cupcake and to no surprise, he dove right in :)  Shawn was there on speakerphone and I gave him a play by play.

I can't believe how fast that year went but I'm looking forward to the years ahead! We love you Eli Blake! Happy birthday!
